Holiday season means BAKING BAKING BAKING! I, personally, love baking!! I love how precise it is, and how the smallest tweak and make an entirely different dessert! Last year, I started making cookie tins for some people, it was the perfect way to say "thinking of you" when the holiday season came around (plus kids LOVE it). This year, I used some old recipes, some favorites, and tried some new ones. Keep reading to find out my favorites from this year!!
Every time I bake, people request truffles. They are very easy to make and the perfect for dessert for anyone! This year, I went with a bake truffle and a no-bake truffle. First, my bake truffle, was a Sugar Cookie Truffle. For my No-Bake truffle, I went with a classic Oreo Truffle.
Sugar Cookie Truffle
Ingredients:
14 Sugar Cookies
3 Tbsp. Cream cheese
A bag of White Chocolate
Recipe:
1. Bake Cookies according to your discretion, or according to the package
2. When the cookies are cooled, place 12 cookies in the food processor and keep it going until they are crumbs/crushed
3. Add 3tbsp of Cream cheese and mix until completely together
4. Take a spoonful and roll into a ball, place on parchment paper; when completed place the tray in the fridge for 30 minutes or until firm
5. Take tray out, melt chocolate according to the package, and dip each truffle into the chocolate until all are covered completely
Optional: Use the last 2 cookies, to create a crumble on the top of your truffles before they harden completely
Oreo Truffles
Ingredients:
1 pkg of Oreos (I Prefer Double Stuffed)
1 pkg of Cream cheese, somewhat room temperature
Recipe:
1. Crush the oreos (I enjoy using my food processor to crush the oreos into crumbs, but putting them in a bag and crushing them manually works too)
2. Cut the package of cream cheese in fours and place it with the crumbs, preferably in a big bowl, and mix until combined completely (I usually use my hands towards the end to make sure it is all combined well)
3. Line a tray with parchment paper and take a spoonful of the oreo/cream cheese mix and roll into a ball, after this place on the tray
4. When all of the oreo/cream cheese mix is finished, place the tray in the fridge and chill for 30 minutes or until firm
5. Take tray out, melt chocolate according to the package, and dip each truffle into the chocolate until all are covered completely
Optional: After dipping in chocolate, I enjoy sprinkling crushed up pretzels on top to add a sweet and salty
Next, the cookie part of the tins. This year, I baked, 3 different types of cookies, a Chocolate Crinkle Cookie, Sugar Cookie, and Butter Shortbread Cookie. I decorated the Sugar Cookies with homemade icing (1 cup of Powdered Sugar/4 tsp of milk) and sprinkles!! I also dipped my sugar cookies in leftover chocolate I had from the truffles for a little extra sweetness.

My favorite cookies I make are Butter Shortbread Cookies, they are the perfect amount of sweet for the holidays and can be switched up a ton of different ways. I, either, add sprinkles to the dough when rolling it out, or add jam to the middle (I used mango this year) to give a fruity flavor.
